It’s Jako’s birthday today! Apart from being my boyfriend he is also my best friend therefore I got very excited when I started planning things surrounding his birthday. Initially I wanted to bake him a gingerbread house and decorate it in all his favourite sweets with a happy birthday candle fence… That failed horribly when I tried it out on a recent trip home. I ended up wasting 5 hours of my time and becoming very frustrated with the recipe that I chose. Eventually I just broke it all into pieces and drizzled an orange icing over it. Enough was enough.
Back to the drawing board Jako mentioned that he would like red velvet cupcakes and a chocolate cake in terms of sweet things for his birthday. The cupcakes he would then take to the office and we would have the cake at home. I immediately decided to go with the red velvet cupcake recipe Carla passed along to me last year. Carla came across the recipe on the blog of a UCT student Kath, view the recipe here. I love the moistness of the cupcakes. If you prefer a stiffer icing add more icing sugar to pipe.
And for the chocolate cake I decided on a recipe by Nigella Lawson. If you are going to make a cake use a recipe from someone who knows what they are doing when it comes to dessert, and who knows more about dessert than Nigella? She loves food and I completely trust whatever she dished up. And so I decided on her Devil’s cake. I love the sugar used, it makes all the difference. Do not think to substitute with normal brown sugar. The caramel syrup in the sugar is simply too good.
This evening I am making burgers with caramelized onions and brie served with sweet potato chips. And over the weekend we will be celebrating Jako’s birthday in Longstreet, who doesn’t love birthday festivities?!
